carrot-apple-ginger smoothie

I love ginger. Period.

How many times have you heard a friend, relative, or co-worker tell you to drink a glass of ginger ale to sooth a sour tummy? Well, I would be willing to bet, more than a few times. However, I say screw ginger ale, that’s just a sugary drink masked with the words “ginger and ale”. Instead, get your booty to the store and buy the real thing! Fresh ginger is like my secret weapon for tummy aches. I always keep it on hand, and any time I feel my digestion going south, I cut off a tiny piece, chew, swallow and then follow with a glass of water. Works every time.

Ginger is also beneficial for morning sickness, motion sickness, reducing pain and inflammation, heartburn relief, cold and flu prevention, migraine relief, menstrual cramp relief, and slowing the growth of colorectal cancer cells. Pretty amazing, huh?

While I stated my love above for just chewing straight ginger, there are actually more palatable ways it can be consumed. For example, in salad dressings (minced fresh ginger), green juices (awesome addition to juicing), as a marinade and in this case, through my yummy carrot-apple-ginger smoothie.

While I love carrot-apple-ginger juice, I really wanted to come up with something for people without a juicer on hand – still being able to reap the benefits of ginger with just a blender. I also just like the idea of having a high fiber smoothie sometimes, as opposed to juice, which extracts the fiber.

One ingredient in this smoothie, is almond yogurt – don’t be scared. All almond yogurt is, is a one to two ratio of almonds to distilled water, blended to a past-like consistency and left in a warm (90 degrees) place over night (I use my dehydrator to regulate temp.). I also break open one or two (amount depending) Acidophilus Pearls (friendly bacteria) and add to the mixture. If you’re adding the pearls, be sure to blanch your almonds before blending (this kills the bad bacteria).

If you don’t have almond yogurt on hand, then just substitute with a few almonds and lemon juice, or, you could use whatever yogurt your little heart desires.

Ingredients

2 cups of carrots
1 apple (cored)
thumb size amount of ginger, peeled
2 T almond yogurt
sweetener of choice (I use stevia)
water to blend
2 or more handfuls of ice

Blend all ingredients (except ice) in a high speed blender until mixture is smooth. Once smooth, add ice cubes and continuing blending.

Pour into glasses and enjoy!

Isn’t the color just fantastic!? I tried to edit down the photos, but had to throw in this last one to emphasize it’s beauty! It’s like the most perfect curry powder yellow-orange color… love.

Yesterday was such a better day than Tuesday was, and guess what!? I remembered my supplements – yay! haha, I really swear by Source Naturals Calm Thoughts – such a great product. It’s especially great if your someone who is trying to relieve yourself from ADHD medication and/or nurse a shot adrenal gland back to health.

In my personal life, I’ve bitten off more than I can chew (I’m excellent at doing this) and took on a website design project that is taking up quite a bit of time… So, sorry if my post are posted at random times for the next week or so!
