easy pad thai salad

Let’s start today with a little Facebook rant, ok? ok.

What is the deal with people and run-on sentences? Seriously, they make me cringe every time I see them. In fact, I’ve started to hide my friends who have this tendency, as it only makes me think horrible things about them (girl can’t help it). I understand the common grammatical error every now and then, but come on – a paragraph long sentence with out any periods or commas!?

I remember a teacher once saying that any opportunity to write (I would include FB status in this category) is an opportunity to practice your literacy skills. You don’t realize it, but overtime you become a better writer with consistent practice – or, vice versa if using poor grammar (it’s like a piggy bank:  one penny might not seem like a lot, but 2 million will change your life!).

So, please people, just use the period and comma keys, they won’t bite you. Promise.

Now, food time. Raw food is not hard, nor is it that time consuming. It can be, don’t you worry… but no more than making meatloaf, or baking a pie. It just depends on how and what you eat. For the most part, I like to keep it fairly simple – as in, I’m not using my dehydrator daily. The following pad thai salad is a great example of a super easy dinner that even the ‘macaroni and cheese’ novice could throw together (at least, I hope so).

Easy Pad Thai Salad

Peel 1 cucumber and 3 carrots

Julienne cucumber and carrots.

Mince a handful of fresh mint and basil.

In large bowl, combine carrots, cucumber, mint and basil. Add the following ingredients (don’t fret if you don’t have it, just leave it out):

sea salt (very important, as the salt softens the carrots)
minced garlic
coriander
chili
onion powder
cumin
black pepper
celery seed
fenugreek
lemongrass

Set mixture aside for approximately 10 minutes to soften. In a small bowl, whisk together the juice from 1 lime and 1 tablespoon of almond butter. Poor over carrot and cucumber mixture.

Slice one head of romaine lettuce.

In a serving bowl, layer pad thai on top of lettuce and finish with sliced avocado.

See, that’s it. Easy peasy.

      haha – Yes, baby steps! If I end up moving downtown though, you won’t have to cook, as you’ll just be able to walk over to my place for dinner :)
