raw two-bite brownies

“I don’t understand why so many “so called” chocolate lovers complain about the calories in chocolate, when all true chocoholics know that it is a vegetable. It comes from the cocoa bean, beans are veggies, ’nuff said.”

Ever have those days where you stop in a moment of complete failure and think ‘how in the hell have I made it this far in life!?’… Yeah, well, I sure did while trying to make The Daily Raw Cafe’s raw chocolate cupcakes. It was. a complete. FAIL. However, with lemons (the failed batter), I did a few modifications, and made some sweet lemonade (or, in this case, two-bite brownies).

Raw Two-Bite Brownies

yield – 8-10 brownies

2 cups of walnuts
10 dates (pitted)
.5 – .75 C cocoa
2 tsp coconut oil (melted using dehydrator)
1 tsp vanilla extract
pinch of stevia (optional)
sea salt, coarse ground (the salt won’t dissolve because of the oil, so I like using coarse as opposed to fine because it adds a nice contrast of texture in every bite)

Grind walnuts in food processor. Add remaining ingredients and pulse until mixture is fairly fine in texture. Note, this may take a few minutes, but gradually, the batter will become extremely fine. Because it takes a while, the dough will build up some oil, which makes rolling a little difficult. To ease the troubles, throw the batter in the fridge for a bit, which should do the trick.

Roll into 1.5″ diameter balls and press into silicone mini-baking cups. Refrigerate until solid and gently release from silicone cups. Another variation would be to leave out the coconut oil and dehydrate for a few hours, or, even overnight… omg, I’m making myself drool, ha.

On a major side note, have you heard of Hype Machine? My lovely intern introduced me to this amazingness today, annnd, I love him for doing so! Seriously, it’s like one large 24/7 music-gasm. It compiles (mostly mash-up and remix) MP3′s from blogs and compiles them in one easy to browse/listen to format (you can even download the tracks from the individual blog site). Ahhh, I love me a good remix.
