Apples and Kale.

The upside to spending ample time on a plane, is being able to catch up on everything Martha Stewart – From magazines, to books – I’m on top of it :)

In this month’s issue of Living, there is a wonderful page dedicated to a few (traditionally cooked) apple recipes. I dog-eared the page because A) I effing love apples (who doesn’t?), and because B) I knew these recipes would translate beautifully into the world of raw.

While all four recipes mentioned sounded lovely (and beg to be made), I was inspired mostly by the red onion + cabbage + apple combination, as I almost always have those ingredients on hand.

wilted kale, tossed with apples, red onion, and cabbage (serves 2)

1 head of kale (washed, rinsed and cut)
1 med apple (shaved thinly using mandoline)
2-3 C shaved red cabbage
.5 -1 C shaved red onion
.5 C pumpkin seeds

dressing

olive oil
red wine vinegar
lemon juice
salt
pepper
Dijon mustard

assembly

In a large bowl, combine all ingredients except the shaved apple and pumpkin seeds. Massage vigorously for approximately 5-10 minutes – taste throughout massaging and adjust dressing ingredients accordingly. Once kale has wilted, toss in shaved apple and pumpkin seeds.

A perfect salad for a perfect fall afternoon. Enjoy.

      Oh Lauren, this was my first time and it was divine – the apple’s sweetness balances out the strong flavors of the red onion and kale amazingly!

      So glad you enjoyed the recipe! I love both of these ideas – I actually had the same thought about using granny smiths and I can’t wait to try when I get back home!
