Once upon a time ago, I made a chocolate ganache tart and thought, that would be damn good with a bit of lime/avocado mousse on top. Following my instinct, I made just that – and it was, delish.
A few months later, in the midst of a rush, I decided I’d make the chocolate ganache (sans shell) and the lime mousse as a pudding-esque dessert to take over to my grandma. She loved the stuff and ever since, has been requesting it. However, she never ate the two separate and was instead just mixing both in a bowl. So I figured, why even bother with two separate recipes, when I could easily mash this into one quick and easy dessert. With that being said though, if I were to make this in a tart form again, I would keep the two separate for visual reasons – the green and black look nice against one another.
Chocolate lime mousse
- 3 C mashed avocado (about 3-4)
- 1 C cacao powder
- .5 C lime juice
- 2/3 C maple syrup
- 4 dates
- .5 – 1 tsp sea salt
- 1 – 2 t vanilla
- 1 T lime zest
Process all ingredients in a blender until smooth. Serve immediately, or, chill in refrigerator.
Now – the packing begins. Ok, I lie, the packing began yesterday and hasn’t stopped. I’ve been shopping, ironing, steaming and shopping some more. Why oh why, is a 4 day business trip kicking my ass!? I am however, excited to be in Long Beach for the rest of this week, although, I’m not going to lie – I’m a little anxious, knowing that on Friday I won’t want to come home. It’s a mental thing, as I’m afraid that I will dread Kansas City more than ever after a quick trip to Cali. That’s crazy, right!? Ahhh, I’m so good at getting in my head
