Step-by-Step Teriyaki Pad Thai

Tell me it ain’t easy.

I’m not going to lie, gourmet raw, can be time consuming to prepare. Time that as of late, I don’t always have. For these busy days, dishes need to be quick, dehydrator free, and yet, full of flavor. I’m not one of those girls who carries around planners with every minute of my day planned out. No. Instead, most days I run around like a chicken with it’s head cut off  losing everything and anything in sight. Car keys, cell phones, chargers – you name it, I spend way too much time looking for it. So with that being said, I get it – we can’t all make elaborate raw dishes every night! It’s really just not realistic. Further more, it’s discouraging to newbies, as they quickly learn raw food can control their lives through scheduling. However, to be fair, so can cooked food…

Any who, in the spirit of my full-blown ADHD lifestyle, here is one of those easy to prepare, but super delicious meals… And, I even broke it down into 5 simple steps for you. Hollaaa.

Easy Teriyaki Pad Thai (serves 2)

Teriyaki Dressing (inspired by VegNews)

1.5 T Hemp Seed Oil
1 T red wine vinegar
1 t tamari
1 T miso
.5 T grated ginger
1-2 packets of stevia

Assembly

4 carrots (julienne)
1 zucchini (julienne)
3 C chopped napa cabbage
2 T hemp seeds

Hemp seed oil is one of those oils that everyone should have on hand – as it’s nutritional profile is quite wonderful. Packed full of essential fatty acids, but without the potential phyto-estrogenic effect of flax seed oil. Hemp seed oil however, has a very distinct taste – I wouldn’t by any means consider it’s flavor neutral, and further more, if you’re not careful it can over power a dish rather easily. However, this might be one the first dressings I’ve made with hemp oil that blew me away! The flavor of the hemp oil when mixed with the other ingredients, actually mimics that of a traditional teriyaki sauce – which, is quite exciting in my book.

Most natural food stores should stock hemp seed oil, but if not, it’s easily accesable through the internet (that’s where I get mine).

      I hope you try it, Marianne – It’s really simple! I’m going to call JC Health Food Store tomorrow for mom to see if they carry any hemp products, I’ll let you know what I find out!

    Is it teaspoon or Tablespoon for the hemp seed oil? The recipe just says “1.5″. Thanks!
