Raw Vegan Thin Mints

A quickie kind of post, for a quickie kind of recipe.

However, these are so gosh-darn good, that they really don’t need much of an explanation. I’m addicted.

Raw/Vegan Thin Mints

Chocolate

  • .5 C melted Cacao butter
  • .5 C melted coconut butter (for a firmer thin mint, sub coconut butter/oil with cacao butter)
  • .5 C maple syrup
  • 1.5 C cacao powder
  • sea salt to taste

Stir all ingredients together in a bowl that is placed over a large pot of hot water. Set aside.

Mint mixture

  • .75 C dehydrated coconut
  • 1.5 C packed coconut meat
  • 3 T coconut butter/oil
  • 1 T maple syrup
  • 1-2 packets of stevia
  • 1.5 tsp mint extract
  • .5 tsp spirulina (coloring agent)
  • salt to taste

Blend all ingredients together until smooth. If need be, you may need to add a bit of water to keep contents in blender moving.

Assembly

Paper or silicone mini-baking cups

Line a miniature cupcake pan with baking cups. Pour a small amount of chocolate in the bottom of each cup. Next, drop a small amount of the mint mixture on top of the chocolate layer. Cover mint mixture with more chocolate sauce. Once all cups have been poured, place in freezer to firm.

Viola -  you’re done! Like I said, I’m addicted – And,  I love the contrast of the hard outer shell with the soft and gooey minty inside – Ahhh, so heavenly.

    Major yum going on here! Thin Mints are one of the only minty things I like, so I may have to buy some peppermint extract just to make these.

    Where in KC do your buy your young coconuts?

      Well, for convenience (right by my work) I go to the large Asian market in the River Market. However, time and time again, I get bad coconuts from them – They always seem to be purple. Personally, the best coconuts I’ve found are the ones at 808 International off of 119th – about $12 or $13 a case, I think.

      haha – I made these the beg. of December and sadly they were slowly consumed throughout the month. But, I’m just pretending that it really didn’t happen… Chocolate thing mints? What chocolate thin mints? :)

    o my gosh!!!! i really really have to make these. but..i don’t have cacao butter..must get some. this is great, i used to love thin mint cookies, what a great and WAY healthier sub.

      Thanks! You could always sub out the cacao butter for coconut oil – However, you’ll want to keep them in the freezer or they’ll get rather soft.
