Ohhh, Thai-inspired food, it’s been way to long.
Given that it feels like ages ago since I last made the above, I decided last night, I’d break the unintentional fast.
As someone who has never resonated well with heavier types of cuisine (i.e. anything German), Thai’s emphasis on lightly prepared dishes with strong aromatic components wins me over every time. It is, more than likely, my most preferred type of Asian cuisine. Thai food, I heart you. And, can’t help but hum a little “so fresh and so clean clean” in your honor.
So, given this infatuation coupled with my unintentional Asian fast, I whipped up this dish for a quick Thai fix. It’s filled with succulent components such as avocado, red bell pepper and cucumber, and finished with a tangy lime dressing. It’s easier than pie to prepare and doesn’t require any advanced prep time – Heck yes, I’ll drink eat to that.
Thai Tomato Salad
9 campari tomatoes (camps are about the size of golf balls) (diced)
4 pickling cucumbers (or, 1 large english) (chopped)
1 red bell pepper (chopped)
1 yellow pepper (chopped)
.5 red or yellow onion (diced)
1 avocado (chopped)
handful of freshly chopped cilantro
Combine all ingredients together in a bowl, set aside.
Dressing
.25 C lime juice
2 T sesame oil (I used un-toasted for a neutral flavor)
1.5 T tamari (reduced sodium)
1 t miso
1 packet of stevia
.5 t red chili paste (1 t if you prefer more spice)
Whisk all ingredients together and pour of salad. Serve immediately, or let marinate in refrigerator.
In unrelated thai food news, I finally set up my box light tent cube last night (that was a mouthful), so I can finally start shooting after the sun sets. However, the apparent 3′ foot specified dimensions, turned out to be more like 5′. Actually though, it’s kind of sweet – I mean what 27 year old doesn’t want a fort sized tent in their living room? Exactly. Ginormous size aside, it does make shooting with faux light much more manageable than anything else I have ever used. Plus, it’s large enough to fit my ply-board sqaures in the bottom, so I shouldn’t have to worry about spillage… famous last words, right?…
Color wise, my images turned out pretty warm – Nothing a little color editing couldn’t fix, but definitely surprising given that I was shooting with compact fluorescent photo bulbs (higher wattage than store bought CFL’s). However, since I’ve been asked before, I always shoot in raw so I can edit the color balance first thing in Photoshop (I <3 photoshop). So whether my images turn out warm or cool, it’s not that big of deal.
So, with that said, I’m off to play in fortress
