If you tell me you dislike granola, we can’t be friends. Period.
Good news, is that I’ve never met anyone who didn’t not like Granola, so for the most part, we should be good.
For Easter this year, I decided to fill my parent’s basket with healthful treats, as opposed to your traditional paraffin-filled bunnies. Or even worse – fluffy neon colored marshmallows. Although, those damn things are adorable…
One of those healthful items, being homemade granola. Besides the versatility of granola, I love how pure and simple the cereal actually is. Sure, I baked this batch, but it’s not about the heat – it’s about whole food ingredients which are free from preservatives, food coloring and artificial flavorings! Moreover, who doesn’t love an all-natural cereal that literally takes less than 10 minutes to prepare and less than 40 to bake.
Although I kept the following recipe extremely simple (insert: my simplistic picky eating father), you could always add in other nuts, dried fruits, hemp seeds, etc… The possibilities are endless!
Honey Almond Granola
7 C rolled oats (old fashioned)
1.5 C sliced almonds
.75 C honey (maple syrup or agave)
.75 C coconut oil
1 T lucama (ok to leave out, if without)
1 T cinnamon
1 tsp almond extract
.5 tsp ground vanilla (or extract)
1 tsp sea salt
Heat oven to 325. Melt coconut oil; mix in the honey, lucama, almond extract, sea salt, and cinnamon. Pour over oats and nuts and mix well.
Bake for 15 minutes and stir: 15 minutes and stir. Repeat until desired color is achieved.
With Mother’s day coming up, package a few bags and fill a large basket full of delicious treats for your madre. Ohh, you could even make a cherry-chocolate granola as well – that would be amazing!
Besides the above, I also filled the basket with Chocolates from Endangered Species (one of my most fav brands!), plenty of Rawxies, a bag of Spicy Glazed Almonds (recipe to come) and custom poodle stationary from I.klek.tuh.sist (ha – that’s me! You can see photos via the link).
