White Chocolate Berry Bites

I was tempted to call these “OMG Bites” – because they are just that, OMG good. However, I realize that not everyone has the same taste as myself, so I refrained from making such a claim. Personally, I generally leans towards more rich desserts, as opposed to sweet. For example, growing up – loved cheesecake, hated (and I repeat: hated) apples pie. Or any pie made with fruit for that matter – that for me, was OMG gross.

So with that, it should be noted that these bites are very decadent. The richness of the cacao butter, paired with the buttery texture of the coconut, is to die for. The berries add a very subtle sweet undertone, while the oatmeal crust adds a burst of unexpected and complimentary flavor.

This recipe has much room for play and/or growth. I even think you could add a hint of lemon juice for something much similar to raw cheesecake, but without the cashews.

White Chocolate Berry Bites

Crust

Equal parts oat flour, almond flour and coconut – totaling 2 Cups
.25 C date paste
1/4 tsp of sea salt
1-2 T of palm sugar

Using a fork, or a food processor, combine the above ingredients. Press into the bottom of a lined 8″ square Pyrex dish – place in freezer.

Filling

1 C melted cacao butter
7 C dehydrated coconut (raw, unsweetened variety)
2 T liquid sweetener (clear agave, maple syrup, etc)
1.5 C strawberries
1 T medicinal black cherry extract (optional)
pinch of salt

In a high-speed blender, blend coconut until its about 2 cups high in the blender – much similar to making coconut butter. Add the remaining ingredients and blend using push tool.

Assembly

Remove Pyrex from freezer and layer crust with filling. Once evenly spread, place in freezer or refrigerator until firm. Cut into bit size pieces and serve immediately, or, store in refrigerator

      Oh – totally hear ya. I used to eat TCBY white chocolate yogurt like crazy growing up – so since then, I’ve had a mild obsession with it!

    Wow, I really need to try some cacao butter. I’ve never tried working with it before but this is the second recipe I’ve seen using it and these look so amazing. Any idea how long they’ll last in the fridge?

      Oh my gosh, Heidi – when you do, you are going to fall in love (the smell is addicting!!). I bet these would last well over a week in the fridge, but personally, if you’re going to keep them long term – just freeze them! That way, they will be good for months!

      Oh Evan, You must! I was so blown away with the finished texture due to the cacao butter – a firm butter-like texture, if that makes any sense, ha. They even held their ‘firmness’ in the heat – perfect!

    i totally chuckled when i read this post because i don’t like fruit pies. not that ive ever tried one – like you, growing up, i totally hated the idea of cooked fruit in pies (i only liked raw fruit), so i’ve just never had an apple pie, blueberry pie, etc. people think i’m crazy!!! so i think it’s funny that you had that same dislike as a kid!

    These look fantastic! Question….for the crust it says equal parts oat flour, almond flour and coconut…..is that coconut flour as well? Can’t wait to make these! Love your site!

      Thanks, Andrea! Sorry for the confusion – it’s dehydrated coconut (the finely shredded variety). However, coconut flour would work as well, I just find it to be a bit drying (maybe add a bit of coconut oil if you go that route).

    I wish I could make these, but I don’t have a blender. It seems to me you can make so much delicious foods if you have a blender, I should buy one soon, even if it is just for these white chocolate berry bites.

      Hi, Alice – Yes, I’ve found that having a high-speed blender allows for so many wonderful creations :) Took me a few years to save up, but definitely worth it!
