Still eating low fat – Still having fun!

I’ve been so amazed these past two weeks at how heavily I rely on fats for flavor – especially when it comes to my salad dressing! So, by eliminating all oils, I’ve been forced to create alternative salad dressings. This little number surprised the heck out of me, as I went in with very low expectations – fat free salad dressing? You might as well kill me now ;) To my amazement though, it’s really been a great addition to my daily diet and has been helping suppress savory cravings.

Carrot Ginger Dressing

  • 1 C carrot juice
  • 1 C carrots
  • 1 orange (peeled)
  • 1 C cherrie tomatoes
  • 1 clove garlic
  • 1″ peeled ginger
  • pinch of salt

In a high-speed blender, blend all ingredients until smooth. Store in glass jar for 4-5 days in refrigerator.

    why aren’t you eating fats and oils?  your body needs some fats for hormone transportation, fat burning, and overall body function….

      Hey, Bex – I’m still eating fats, I’ve just drastically reduced my consumption. The fats I’m consuming are mostly in the form of avocados and nuts. I definitely recommend the book ‘the 80/10/10 diet’ if you’re interested in learning more.

    Love this idea!  The sweetness carrots add is a huge draw for me.  I bet it would be awesome with some cilantro tossed in too.

    Hey Callie,

    Loved the idea of creating a dressing without oil. I would never have thought of using carrot juice in a dressing! One thing though – I heard that to absorb the vitamin A in carrots and salads in general, it’s good to have a little oil since vitamin A is fat soluble. Just a thought!

    And also, I really enjoyed watching the video. I would love to somehow embed that in my magazine – wouldn’t that be cool?
